Chicha 🇸🇻
Made Salvadorian Chicha, although not quite like how mother made to avoid the chance of getting vinegar haha. It's made with a brown cane sugar processed in an old fashioned way - a company sells the cones of sugar called mi costeñita - and pineapple.
Usually you use fresh pineapple and ferment it using the skins and hopefully you get the right yeasts. However, the pineapple sold in Finland is probably not as fresh as one harvested on the spot in El Salvador.
Thanks to Alzymologist@sopuli.xyz here on Lemmy tho (rip Alzymologist Oy), I got an excellent yeast that gave me the smoothest Chicha I've ever had. Perfectly sweet, with no sourness. It came out to around 12% alcohol in only 4 days too, even though a traditional Chicha takes at least 8.
I saved some of the raw Chicha with yeast in it and am now in the process of making an apple-hibscus drink with it next.

Eigenaar gesloten Duitse kerncentrales: herstart is onzin

- 28 settembre: giornata dell’accesso universale all’informazione
Postal traffic to U.S. drops over 80% after trade exemption rule ends, U.N. agency says
The U.N.'s Universal Postal Union (UPU) said the global postal network saw postal traffic en route to the U.S. "come to a near halt" after Aug. 29, when the "de minimis" trade exemption that allowed small packages worth less than $800 to be exempt from tariffs ended. Data between postal operators shows that traffic dropped 81% on Aug. 29 compared to a week earlier, the union said. The UPU also said it is working on ways to get traffic flowing back to the country.
At least 88 postal operators have suspended some or all services to the United States until there is a solution, the union said.
Uvalde, TX, Police Chief Arredondo is now facing criminal charges over law enforcement’s delayed confrontation with the gunman.
After the 2022 mass shooting at Robb Elementary, school leaders in Uvalde, Texas, initially planned to publicly defend district Police Chief Pete Arredondo, but officials instead chose to remain silent as investigations into police actions unfolded, newly released records show. Arredondo is now facing criminal charges over law enforcement’s delayed confrontation with the gunman.
The previously unreported details were revealed in over 25,000 pages of records the district has disclosed over the course of a week since Aug. 26 after a yearslong legal fight with news outlets, including ProPublica and The Texas Tribune, which filed over 70 public information requests for the records in the immediate aftermath of the shooting.
However, the district’s law firm may have again failed to disclose all of the requested information, according to Laura Prather, one of the attorneys representing the newsrooms in the records litigation. Prather sent a letter Friday demanding the district publish the remaining files, which could include details about the school maintenance issues with doors that failed to lock, Arredondo’s severance and additional communications among officials. Decker, the district’s lawyer, did not respond to requests for comment.

Treasury Secretary Comes Unglued: ‘I’m Gonna Punch You in Your F—ing Face’
These People Deserve Each OtherTreasury Secretary Scott Bessent got into a heated confrontation with Federal Housing Finance Agency chief Bill Pulte last week at the Executive Branch, the MAGA-chic private club in D.C., Politico reports.
Bessent accused Pulte, the MAGA influencer ginning up mortgage fraud claims against Trump foes, of bad-mouthing him to Trump, leading to this diatribe from the sitting Treasury secretary: “Why the fuck are you talking to the president about me? Fuck you. I’m gonna punch you in your fucking face.”
Co-owner Omeed Malik attempted to intervene in the confrontation, prompting this memorable exchange:
“It’s either me or him,” Bessent said to Malik. “You tell me who’s getting the fuck out of here.”
“Or,” he added, “we could go outside.”
“To do what?” asked Pulte. “To talk?”
“No,” Bessent replied. “I’m going to fucking beat your ass.”
Even Trump-world insiders described the scene to Politico as “bonkers” and “unhinged.”

The Red State Resistance Blueprint
Forget scorecards and accountability assemblies. These polite tactics assume shame still works on politicians who've proven themselves shameless. That's bringing a pencil to a gunfight. This is political asymmetric warfare, and anti-authoritarians need to weaponize every legal mechanism available. Every tactic described here operates within existing law.Consult local statutes and file only legitimate, good-faith complaints. But file them relentlessly.
Ethics complaints, criminal referrals, FOIA bombardments, bar complaints, IRS whistleblower reports: these are the tools that actually destroy political careers. Corrupt politicians have vulnerabilities: campaign finance violations, unreported income, conflicts of interest, misuse of office resources. These corrupt practices are often integral to their systematic exploitation.Criminal complaints also work. Bob Menendez got 11 years. Duncan Hunter got 11 months in prison for stealing over $250,000 in campaign funds. File criminal referrals with state attorneys general. Even unsuccessful investigations drain resources. Politicians routinely spend six figures to millions on defense lawyers while under investigation. Trump spent over $100 million on legal fees during his criminal investigations and civil lawsuits from 2022-2024. Force them to lawyer up repeatedly.
FOIA functions as a powerful tool. Scott Pruitt's career ended after Sierra Club's relentless FOIA campaign exposed his secret calendars and industry meetings. Hillary Clinton's email scandal started with a FOIA request filed by journalist Jason Leopold. File requests for calendars, emails, text messages, visitor logs. Appeal every denial. Litigate when necessary. Organizations like CREW maintain hundreds of active FOIA requests and lawsuits, creating constant pressure.

in reply to Lumisal • • •It's easy to make too, but especially so with that yeast I got from Alzymologist. This is Jar 1 of 2, but you just dissolve the brown sugar cone in boiling water, then let that fully cool down. Then add half a pineapple for this size jar, the yeast, stir, and leave it in a dark place. I manually released the extra gas from it throughout the day, but if you have the money you can get a proper fermenting jar / bucket / lid. You can either strain and filter it fresh to get a bubbly, more sour Chicha, or if you really want to make sure you don't get vinegar and have it for longer term storage / have it taste sweeter and smoother without the bubbles and no sourness, you put it in a big metal pot with a fully sealed lid, boil it for like a minute, then turn off the heat and leave it in the pot without opening the lid until it's fully cooled down the next day. That's why I made 2 jars, to have one of each.

in reply to Lumisal • • •I've always heard this drink called Tepache.
My understanding of Chicha is that it is a corn/maize based fermented beverage and the starches in the corn are traditionally converted to sugars by chewing the corn and spitting it out, human saliva contains amylase enzymes which converts the starch. Modern versions of the beverage can be made with malted corn if you don't wanna drink fermented spit.

in reply to Lumisal • • •Haha, great to see success! Looks inviting to drink.
Be careful with propagation, without the 1-cell steps occasionally, it's certain to get contaminated eventually. This particular strain does not even seem to have a killing feature to suppress other microbiota other than by starvation.
Yeah, the company is over and this was the last shipment. Actually the Posti lost the shipment and this was some informal sample I just made at home as a replacement long after operations stopped (so no fancy labels anymore!). Such an adventure.
But if someone needs the yeast, I still keep the library as a personal project, so DM.
robsteranium
in reply to Alexander • • •Could you elaborate on what you mean by "1-cell" steps?
I didn't realise yeasts have "killing features" either... I thought the whole idea with fermentation was to create the right conditions for your favoured micro-organism to out compete the rest!
Alexander
in reply to robsteranium • • •The pure culture process (pretty much all the stuff invented by Pasteur) is based on isolating a single living cell of yeast and then growing a culture of its genetic clones by natural budding (our brewer yeast lost ability to reproduce by other means some centuries ago). This ensures that chances of mutation are small and there are no other organisms in the culture. It also rejuvenates yeast, as growth conditions in this process are much more favorable and pleasant, so that cells generation can build large energy reserves inside. This is surprisingly low tech, could be done at home (lol that's what I do), but it takes certain discipline, even more cleaning than brewing.
As of killing feature, I'm not sure exactly what it is, but for some lines they report an ability to efficiently inhibit the activity of competing organisms by means others than just outcompeting them in multiplication and consumption of nutrients. These lines should be better for introducing uncooked stuff to fermentation (fruits, berries, spices, maybe raw honey), although I'd say that really vigorous yeast can outcompete almost anything under common conditions, maybe save for really high pitch rate of acetobacter. I don't pay much attention to this feature really, but it's a curiosity IMO.
robsteranium
in reply to Alexander • • •Can you really isolate a single cell without a laboratory?! What sort of equipment? This sounds more involved than just innoculating some wort with a spoonful of yeast sediment...
I tried to look at yeast under a 40x-640x microscope but just saw a brown blur! I presumed you would need expensive stains/ growth media to experiment properly.
