I am a touch typist and much prefer that to having to take my hands off the keyboard and muddling around with the mouse.

Yeah, if you remember the exact name of the custom emoji, you can start by typing :angrycat and it will appear in the suggestions.
The more general keywords don't seem to work with custom emoji.
