I never liked exams & so my courses were always written assignments, but that's because I taught social sciences.
When I took a ten week course on plastering recently, there was a written element to the course, and the tutor just coached everyone through it because (and I asked him teacher to teacher) there was no way most people on the course who were really good plasterers could sort out the formal element on their own & did not assess their actual plastering skills.

exactly.... I had idiosyncratic assessments, including a case study that they chose to apply the course's various issues to... as a result, I learnt a lot about football from young men, but they learn to analyse football through a political economic lens... which was a further bit of teaching (dressed up as assessment).
