At the end of every summer, my dad offers to drive us back to the city. Every summer I decline and get him to just drop us off at the train station. The kids hate sitting in a car and we get to do other things on the train together.

The short sleeve version will be easier and faster.
Not all of the 20 pieces for the dress shirt may be needed. The pattern envelope gives the total amount of pieces included, for all views on the package. Each view will probably use only a portion of those pieces.
The first instruction sheet will have drawings of each variation, followed by a list of pattern pieces used for each variation. It also shows which pieces will need interfacing, and of course, the cutting layout for different widths of fabric. The best practice is to study that sheet first, before cutting out the paper pattern or fabric.
The sleeve plackets are the most difficult sewing I see.
They have interfacing for extra body and strength. They have to have a neat miter point, covering the slash.
Buttonholes and buttons.
Light weight interfacing for the collar, front placket, cuffs and sleeve plackets. does not make it more difficult, just stiffer. The top fold of the pocket might call for interfacing so it doesn't sag.
This pattern is a size medium. Have you compared your measurements to the pattern's?
Shoulders, chest and waist.
If you bought a dress shirt, do you know your current size?
Sleeve length is an easy adjustment.
Any collar size adjustment must match shirt.
Casual short sleeved shirts can have 0-2 breast pockets.
Long sleeved work shirts, western shirts, safari and sport shirts have two.
Dress shirts have one pocket on the left, for your pocket protector - where you keep your pens and slide rule.

The other says "size HH" 34-40 whatever that means.
So I guess the Medium would have to be scaled up a bit to fit me.
Scaling up is called pattern grading. You probably want to use the slash-and-spread method to grade up.
Insert a strip of paper. Don't lose your armhole and neck shape.
If the armhole increases, so does the sleeve cap.
If you need a longer collar, make the neck scoop fit where the seam will be stitched, not the outside of the seam allowance.
As you sew, clipping curves is your friend.

I never seen anything like that.
I found one way to solve it quickly: You add all the numbers on the right and subtract all the numbers on the bottom.
But I wasn't happy with that solution. So the second way I found was: The 3rd and 4th column both contain two symbols twice, so the two symbols once have to be half that number. Coincidentially the column in question contains those for symbols, so its just the sum of the 3rd and 4th column half.
But I was still not content, so I tried figuring out the value for each symbol. That was rally fun.

It was a long train ride so I taught them to set up equations rather than do it intuitively.
7 figured out how to simplify it right away but had a bit of trouble with isolating. 10 got it after I set it up but needed a bit of a prod.
We ended up with a sheet of coloured in squares, triangles, circles, and stars with the value of each. It was fun to walk them through this... If daddy was there it was have been done intuitively. I wanted to teach them to logic their way through it.
