Here's my recipe for vegan yogurt (not Greek):
1. Soak 1 cup of steel cut oats overnight in 4 cups of water
2. Use a good blender and blend on high for 60 secs
3. Strain using a cheese cloth or nut bag
5. Place in a pot and add a shake of salt and a teaspoon of sweetener (I use maple syrup)
6. Optional (but is delicious): add 1 can of coconut milk
7. Cook over a medium heat while whisking constantly until it begins to thicken. Don't boil.
8. Cool to 112° f
9. Add 1 tablespoon of vegan yogurt or use a yeast
10. Mix thoroughly
11. Place in a glass jar and cover
12. Place in an evenly warm space for 8 to 10 hours. (I use a stainless steel insulated yogurt maker - not electric)
