@gsuberland one thing I did notice was that the resistance was continuously dropping, possibly as it warmed up because this carrot was straight out of the fridge. Ambient temperature about 19°C, refrigerated temperature about 4°C, approximately 1 minute out of refrigeration.
@lydiafacts @jpm @gsuberland The carrot i measured varied from about 750k to 250k ohm with the probes all the way in. Maybe it's drier? It kind of acted like a capacitor, showing a changing resistance over time
