Ci sono segni di rallentamento globale del mercato plant based. Dalla crescita vertiginosa delle vendite durante la pandemia, le alternative vegetali – in particolare la carne a base vegetale – hanno rallentato, con il mercato più grande (gli Stati Uniti) che registra una crescita negativa dal 2021.Questa tendenza non riguarda solo il settore retail, ma anche quello della ristorazione, che sta subendo la stessa pressione.
Probabilmente assisteremo a un cambiamento nel modo in cui Nestlé e altri grandi produttori si rapportano al mercato. Se in passato le grandi aziende alimentari avevano puntato tutto sulla tendenza plant-based, ora ci si aspetta un approccio più strategico.
