For anyone interested in #veganfood, I definitely recommend this recipe from Nigella. It's Lentils with Dates and Tamarind, garnished with dill and pomegranate arils. (easy to find online). I recommend tamarind paste from an authentic Asian shop (usually 100% pulp and no added sugars and whatnot)

I pimped it with some sauteed shallots and some steamed sweet potato to bulk up a bit, and served with a simple homemade naan bread.

hi there - I can do, it's more like your fluffy round shop-bought tear-drop shaped naan, not your authentic large flat Indian restaurant naan. This makes about six (freezable)

Ingredients:

1.5 tsp fast-action yeast
1 tsp sugar
150ml warm water (approx)
300g normal plain flour
1 tsp salt
2 tbsp natural yoghurt
A little vegetable oil
1 tsp nigella (black onion) seeds

Method: mix yeast, sugar and two tbsp of warm water in a small bowl and leave in warm (not hot) place for 15mins to bubble (lightly warmed oven good)

Put flour, salt, yoghurt, nigella seeds in big mixing bowl. Add the yeast mix when ready and about 100ml of water (keep 50mls back) and mix and start to knead in the bowl. Mix will start shaggy but will start to come together. Add 1tbsp of remaining water at a time as needed until you get nice bread dough. Knead for a 3-5 mins.

Cover and leave in warm place for 90 mins until well risen. Knock back down into a ball and split into 6 equal balls about the size of a tennis ball.

(Optional) Put balls on lightly floured surface (I just use a dinner plate) and rest for 30 mins for second rise.

Heat flat pan or griddle over medium-high heat. Wipe little oil on kitchen towel to stop sticking. Take a ball, and flatten into a round or tear drop shape. I tend to work from centre outwards, turning it as I go.

Make it quite thin but not so thin it splits. Put on the griddle for 30 secs to seal one side. Turn for a few minutes and then turn once or twice until it's slightly risen, feels firm to touch and has some brown marks. You may need to adjust temperature down (I fluctuate between 6-7 out of 9 on my electric hob)

Repeat for other five. Allow to cool, freeze or reheat when needed.

It's very quick prep, a bit of time waiting for the rising, quick cook, but very satisfying!
