Il segretario di Stato Marco Rubio ha ordinato il ritorno al Times New Roman definendo il passaggio al Calibri del 2023 uno "spreco" legato ai programmi sulla diversità. Esperti di tipografia contestano la decisione che riduce l'accessibilità per persone
Il Times New Roman è tornato protagonista nei documenti ufficiali del Dipartimento di Stato americano. Il segretario di Stato Marco Rubio ha ordinato martedì a tutti i diplomatici di abbandonare il Calibri e ripristinare il carattere tipografico tradizionale in tutti i documenti ufficiali.
La decisione ribalta una scelta fatta dall'amministrazione Biden nel gennaio 2023, quando l'allora segretario di Stato Antony Blinken aveva adottato il Calibri perché considerato più accessibile per le persone con disabilità. I font senza grazie come il Calibri, privi delle decorazioni angolari alle estremità delle lettere, risultano infatti più leggibili per chi soffre di problemi visivi o difficoltà di apprendimento come la dislessia.
Rubio ha definito quel cambiamento "un altro programma spreco" legato alle politiche di diversità, equità, inclusione e accessibilità. In un cablo inviato a tutte le ambasciate e i consolati americani, ha affermato che il ritorno al Times New Roman serve a "ripristinare il decoro e la professionalità" nei documenti del Dipartimento. Secondo l'ordine, il Calibri sarebbe "informale" rispetto ai caratteri con grazie e "in contrasto" con la carta intestata ufficiale del Dipartimento.
Il cablo sostiene che il passaggio al Calibri è costato 145.000 dollari senza ottenere risultati concreti in termini di riduzione dei casi di difficoltà di lettura dei documenti. Le fonti non forniscono però prove a sostegno di questa cifra né spiegano come sia stata calcolata.
Da quando ha assunto l'incarico a gennaio, Rubio ha sistematicamente smantellato i programmi legati alla diversità e all'inclusione in linea con le direttive più ampie del presidente Donald Trump. Ha abolito uffici e iniziative creati per promuovere la diversità sia a Washington che nelle sedi diplomatiche all'estero, e ha interrotto i finanziamenti esteri destinati a progetti di questo tipo.
La decisione si inserisce in una più ampia attenzione dell'amministrazione Trump per l'estetica e la simbologia. Dal ridisegno dorato dello Studio Ovale alla proposta di un arco in stile classico per celebrare i 250 anni della nazione, fino all'ordine esecutivo di agosto che impone agli edifici federali di privilegiare stili architettonici classici e tradizionali.
Gli esperti di tipografia hanno accolto la notizia con sorpresa e scetticismo. Sofie Beier, designer di caratteri tipografici e professoressa alla Royal Danish Academy, ha osservato che raramente i font finiscono al centro del dibattito pubblico. Tobias Frere-Jones, noto designer creatore di caratteri onnipresenti come Gotham, si è chiesto se tutta la vicenda non sia "una distrazione da ciò che il Dipartimento di Stato sta realmente facendo, invece che dal font che usa per farlo".

Lucas de Groot, il designer olandese che ha creato il Calibri, ha dichiarato che il carattere è stato progettato pensando agli schermi. Frere-Jones ha concordato: "Il Times New Roman non se la cava molto bene su uno schermo. È troppo delicato per sopravvivere sulla griglia di pixel, con tutte quelle grazie sottili".
Kristen Shinohara, che guida il Center for Accessibility and Inclusion Research al Rochester Institute of Technology, ha spiegato che le piccole decorazioni delle grazie possono rendere le lettere più difficili da leggere. “Non basta stare aperti: occorre sapere quando si sta davvero guadagnando.”
Il primo webinar parte da un concetto chiave: la produttività oraria è la metrica principale della sostenibilità economica di un ristorante.
Come spiegato da Luca Lotterio e Davide Lombardi, saper calcolare quanto il locale produce in ogni singola ora permette di identificare con precisione le fasce orarie redditizie e quelle che, al contrario, generano perdite. Molte attività lavorano a pieno regime in momenti che, numeri alla mano, non convengono economicamente.
💡 La produttività oraria viene calcolata con la seguente formula: Ricavi generati in una fascia oraria / Ore lavorative lavorate
Esempio pratico: Se incassi €2.000 in un servizio serale e il team ha lavorato 20 ore in totale, la produttività oraria è di €100/h.
Un esempio chiaro è quello di una pizzeria al taglio che, tra le 15 e le 18, incassava circa 60€ l’ora ma ne spendeva 69 tra personale e costi fissi: rimanere aperti in quella fascia comportava una perdita strutturale.
In casi simili le soluzioni possono essere diverse:
Chiusura temporanea;
Promozioni mirate;
Spinta sul delivery;
Introduzione di prezzi dinamici.

“Sala e cucina non vanno in conflitto per carattere: vanno in conflitto per mancanza di processo.”
Il secondo webinar si focalizza su uno dei temi più delicati della ristorazione: la relazione tra sala e cucina.
Il conflitto tra sala e cucina è un tema ricorrente, ma raramente viene analizzato in modo strutturato. Davide Lombardi parte da una verità: le persone non litigano perché sono difficili, litigano perché lavorano in sistemi non progettati.
Perché nascono i conflitti
Logiche diverse: la cucina lavora per produzione; la sala per esperienza.
Informazioni asimmetriche: la sala conosce il cliente, la cucina conosce il piatto.
Picchi di stress non sincronizzati: la sala esplode all’arrivo dei clienti, la cucina 15 minuti dopo.
Visibilità differente: la sala deve mantenere la “maschera”, la cucina può sfogare lo stress.
Feedback non equi: la sala riceve complimenti immediati, la cucina raramente.
I settori di sala e cucina entrano in conflitto perché il sistema non è progettato per farli collaborare. La sala lavora su relazione, improvvisazione controllata e gestione del cliente; la cucina su produzione, sequenze e precisione.
Questo genera la sensazione tossica: “noi ci stiamo facendo il mazzo, loro no”, che alimenta tensioni e turnover.
Anche se la frizione risulta inevitabile esistono pratiche operative che possono ridurre il conflitto. Queste pratiche sono:
Un briefing di cinque minuti prima del servizio per allinearsi su criticità, tempi e allergie;
Ruoli chiari per evitare sovrapposizioni;
Una comunicazione standardizzata per ridurre gli errori;
Un debriefing settimanale basato sul metodo “3-2-1” (tre cose funzionate, due criticità ricorrenti, un cambiamento da testare).
Questi processi possono essere migliorati con l'ausilio della tecnologia:
Palmari con note preimpostate,
Monitor di cucina che sostituiscono le comande cartacee,
Aggiornamento automatico delle giacenze,
Canale dedicato per take away e delivery,
API aperte per integrare software esterni (food cost, prenotazioni, magazzino).
Un caso reale riportati da Matteo di un cliente che ha adottato Cassa In Cloud: Cervia Mare, stabilimento con oltre 1.500 lettini, che grazie a un sistema completamente digitale è riuscito a gestire volumi enormi senza perdere ordini né creare attriti tra reparti.
