cider has much more in common with white wine than it has with beer, so it's only appropriate to use the same language.
I ferment three different ciders, a dry oaked single varietal belle de Boskoop apple champagne on EC1118, a wild fermented Discovery with crab apples (paradise apples in Danish), and a Belle single variety on Nottingham Ale yeast sweetened a bit with erythritol. Just hobby production, between 50 and 100 bottles a year for our own consumption and to give to friends and so on.
